One Simple Tomato Sauce That Turns Into 5 Different Family Dinners

There are a handful of things that quietly make everyday cooking easier—and a simple tomato sauce is one of them.
Not because it’s impressive.
Not because it’s complicated.
But because once you have it, dinner stops feeling like something you have to figure out from scratch every night.
This is the sauce I make without thinking. It’s quick, made from things I already have, and it gives me a starting point when I don’t know what else to cook.
Start With One Simple Base
This isn’t about following a perfect recipe—it’s about having something reliable.
What I Use
Tomato passata ( I prefer a good quality thicker passata - some can be quite watery )
Garlic - I always use my frozen garlic pucks, but fresh or powder is good.
Olive oil
Salt and pepper
Dried oregano (sometimes)
I personally prefer a smoother sauce, so I usually stick with passata. But if you like a bit more texture, you can easily add a tin of chopped tomatoes as well.
How I Make It
I heat the oil, soften the garlic, pour in the passata, season it, and let it simmer while I get everything else ready.
No measuring. No overthinking. Just letting it bubble away until it tastes right.

This is the part that matters.
Because once the sauce is done, I’m not standing in the kitchen wondering what to cook—I’ve already got a base that can go in a few different directions depending on what we feel like (or what’s in the fridge).

Sometimes I just toss the sauce through pasta, add whatever cheese we’ve got, and call it done.

Spread the sauce over wraps or flatbreads, add cheese and whatever toppings we have, and bake until crisp.

Mix the sauce with pasta, add cheese, requeijão (cream cheese) bake until hot and bubbling. Also add in some cookes Italian sausage for extra depth of flavour.
This is the one I lean on when everyone’s extra hungry or I want something that feels a bit more substantial.

Once you’ve got this sauce, there are so many other easy meals you can make without much extra effort.
Things like:
spaghetti and meatballs
meatball marinara baguettes or wraps
simple lasagne
simple bolognese risotto
stuffed peppers
even a quick dipping sauce for bread or homemade chips
I don’t make these every week, but they’re good to have in mind when you want something a bit different without starting from scratch.

It’s not about following a new recipe—it’s just about using what you already have and adjusting as you go.
