Ingredients
Garlic Bread
- 150g butter, room temperature
- 6 garlic cloves, minced
- Handful fresh parsley, chopped
- Sea salt, to taste
- Cracked black pepper, to taste
- Mozzarella and cheddar cheese (or cheese mix of choice), generously grated
- 1 rustic loaf of bread, halved
Meatballs & Sauce
- 1kg beef mince
- 1 tbsp dried oregano
- Sea salt, to taste
- Cracked black pepper, to taste
- Olive oil, for cooking
- 600g thick tomato passata
- 2 tsp dried oregano
- 3 garlic cloves (or garlic powder / frozen garlic puck)
To Finish
- Fresh parmesan
- Fresh parsley, chopped
Method
1. Prepare the garlic bread
Mix the butter, minced garlic, parsley, salt, and cracked black pepper together in a bowl.
Spread generously over both halves of the rustic loaf. Top with a thick layer of grated mozzarella and cheddar.
Bake at 180°C for about 10 minutes, until warmed through and the cheese has melted. Finish under the grill until golden and bubbling.
2. Make the meatballs
Season the beef mince with sea salt, cracked black pepper, and dried oregano. Mix well and shape into meatballs.
Heat olive oil in a large skillet and cook the meatballs until browned and fully cooked through.
3. Make the marinara sauce
In the same pan, add the tomato passata, garlic, dried oregano, salt, and pepper. Stir well and simmer until the sauce is hot and slightly thickened.
4. Assemble the sandwich
Top the garlic bread with the cooked meatballs and spoon over the marinara sauce.
Finish with a generous sprinkle of fresh parmesan and chopped parsley.
Slice and serve immediately — or enjoy it open-faced for maximum indulgence.
