If you love making food from scratch but want to keep things budget-friendly, this homemade walnut pesto is a simple swap that makes a big difference.
Traditional pesto uses pine nuts, but they can be expensive and hard to find. Using walnuts instead creates a rich, slightly earthy flavour while keeping costs low—without sacrificing that fresh, vibrant taste we all love.
This is the kind of recipe I come back to again and again. It’s quick, flexible, and perfect for busy kitchens.
Why Use Walnuts Instead of Pine Nuts?
Walnuts are:
Much more affordable
Easy to find in most shops
Full of healthy fats and nutrients
Slightly more robust in flavour (which works beautifully with garlic and lemon)
It’s a simple swap that makes homemade pesto far more accessible for everyday cooking.
Ingredients (Simple & Fresh)
1 cup walnuts
Fresh basil (a generous handful or two)
3 cloves garlic
Juice of 1 lemon
Sea salt, to taste
Cracked black pepper, to taste
Olive oil (enough to reach your desired consistency)
Parmesan (optional) 1 cup or leave out if sticking to a budget
How to Make Walnut Pesto
Add the walnuts, basil, and garlic to a food processor.
Pulse until roughly combined.
Add the lemon juice, salt, and pepper.
Slowly drizzle in olive oil while blending until you reach your preferred consistency.
Taste and adjust seasoning if needed.
That’s it—fresh, homemade pesto in minutes.
About the Parmesan (Optional Tip)
You can absolutely blend Parmesan into your pesto, but to save money, I prefer to leave it out and add freshly grated Parmesan when serving.
This way, you:
Use less cheese overall
Get a fresher flavour on top of your pasta or pizza
Stretch your ingredients further
How to Store & Freeze Pesto
This pesto freezes beautifully, making it perfect for batch prep.
Freezer tip:
Keep the pesto slightly thicker before freezing.
That way you can:
Use it as a spread for sandwiches or pizza bases straight from the freezer
Add olive oil later to loosen it for pasta, salads, or drizzling
Store in small containers or ice cube trays for easy portions.
Ways to Use Walnut Pesto
Toss through pasta for a quick meal
Spread on sandwiches or wraps
Use as a pizza base instead of tomato sauce
Stir into salads for extra flavour
Serve alongside roasted vegetables
Simple recipes like this are what make from-scratch cooking feel doable. With just a few fresh ingredients and a budget-friendly swap, you can create something versatile, nourishing, and full of flavour.
If you’re growing your own basil, even better—there’s nothing quite like turning something from your garden into a meal on the table.
