Easy Homemade Granola Clusters with Cranberries, Honey and Oats

This easy homemade granola recipe makes delicious crunchy oat clusters using simple pantry ingredients like rolled oats, honey and coconut oil. Baked until golden and crisp, the granola forms large clusters that are perfect for breakfast or snacking. After baking, it’s mixed with sunflower seeds, chopped nuts, dried cranberries and chocolate chips for extra flavour and texture. This recipe is simple to make, stores well in an airtight jar and is perfect for batch preparing breakfasts for the week.


Ingredients


  • 1 cup coconut oil

  • 1 cup honey

  • 6 cups rolled oats

  • 1 cup roughly chopped nuts (walnuts or pecans work well)

  • 1 cup sunflower seeds

  • 1 cup dried cranberries

  • ½ cup chocolate chips

  • Pinch of sea salt

  • Vanilla extract, to taste


Method


1. Melt the oil and honey

In a large saucepan, add the coconut oil and honey. Warm gently until the coconut oil has melted.


2. Add the oats and flavouring

Stir in the rolled oats, sea salt and vanilla extract. Mix well so the oats are evenly coated.


3. Prepare for baking

Transfer the mixture to a large lined baking tray. Spread it out evenly and press it down slightly to help form clusters while baking.


4. Bake

Bake in a preheated oven at 180°C for 30–40 minutes, or until the granola is golden.

If you prefer large crunchy clusters, do not stir the granola while baking.


5. Cool completely

Allow the granola to cool completely in the tray. This helps it firm up and form clusters.


6. Add the remaining ingredients

Once cooled, break the granola into clusters and mix in the sunflower seeds, chopped nuts, dried cranberries and chocolate chips.


7. Store

Transfer the granola to an airtight jar or container and store at room temperature.


Serving Ideas


This homemade granola is delicious:


  • With yogurt and fresh fruit

  • With milk for breakfast

  • As a simple snack straight from the jar
