Easy Cheat Hummus

Since travelling there have been a few staples from our diet that we have missed and have been unable to find in our local supermarkets. The list is quite long, but one of the most missed is, hummus... It's delicious creaminess and fresh taste has been on my mind for a LONG TIME!

So what do you do when you crave something and can't find it anywhere - you make it of course, AND that my friends is exactly what I've done...

Oooooh! It's good...

This traditional Middle Eastern dish made from chickpeas is a must when you're looking for a healthy and nutritious dip or spread... Commonly made with tahini sauce, we however opted for homemade peanut butter instead and may I say it tasted delicious...

If you're a fan of hummus then you'll be aware of the numerous flavours available, but when it's hot, I just want something simple and fresh and so I have created this zesty dish of yumminess...

So fresh & zingy...

Hummus is great. It's so versatile and can accompany many dishes. It's perfect with fresh salads, in falafel wraps ( my favourite ), side dish at bbq's, pizza topping, a dip, a spread - the list is endless...


This quick and easy recipe is delicious and will be sure to give your taste buds a FIESTA!

Fresh hummus should last for up to 3 days in an airtight container in the fridge -perfect for meal-prep.

INGREDIENTS

serves approx 8-10


510g of cooked chickpeas ( I use canned )

2 tbsp of extra virgin olive oil ( plus extra for serving )

1/4 cup of Tahini

3 large cloves of garlic

1 large lemon ( juice only )

Large Pinch of sea salt

Large Pinch of black pepper

1 heaped tsp of Cumin


METHOD


Drain your chickpeas and add them to your food processor.

Peel your clove of garlic and add it to the processor, along with everything else, excluding the olive oil.

Pulse and then blitz until smooth - drizzle in the olive oil until you reach your preferred consistency.


Store in an airtight container in the fridge.

Consume on the same day or store in an air tight container in the fridge for up to 2-3 days.


SERVING SUGGESTION

Drizzle the hummus with fresh olive oil, your favourite chilli sauce and a squeeze of lemon juice.
