Can I use a different cheese?
Absolutely. Any strong-flavoured cheese works, but smoked varieties add the best depth. Strong sharp cheddar os delicious.
How do I make them gluten-free?
Substitute the plain flour with a 1:1 gluten-free baking mix.
Can I freeze these pancakes?
Absolutely! Infact we like to double the batch and then freeze half. Freeze them in single layers and then transfer to a freezer bag. Just pull them out when needed.

INGREDIENTS FOR SMOKED SAVOURY PANCAKES
(makes 10- 12 large thick pancakes)
600ml of milk
400g of Organic plain flour
1/4 cup of butter - melted
1x large egg
2x heaped tsp of bicarbonate of soda
1x heaped tsp of baking powder
1x tbsp of oregano
pinch of sea salt
Pinch cracked black pepper
300g of your favourite smoked cheese (or sharp cheddar) - grated
METHOD for Making Smoked Cheese Savoury Pancakes
Add all of the ingredients (excluding the cheese) to a large mixing bowl and whisk together by hand until fully combined (you don't want a smooth batter, but instead a LUMPY batter).
Now add in the cheese and combine.
Preheat your frying pan. Once heated add some butter and a dash of olive oil and heat on a medium heat.
Once heated turn to a low heat and add a small ladle of the mixture, spread gently to shape and fry.
Once air bubbles appear on the surface it's time to flip.
Cook for approx 30 - 45 sseconds each side until golden (depends on the size of your pancakes).
Serve and enjoy!
