Healthy Curried Sweet Potato Fritters Recipe
Ingredients
1 medium orange sweet potato, grated
1 small carrot, grated
1 small courgette, grated
½ small red onion, finely diced
3 - 5 cloves garlic, crushed
1 tbsp of freshly grated ginger
Large handful fresh coriander, roughly chopped
Large pinch sea salt and cracked black pepper
( use 3 tsp of curry powder or add the following spices below)
2 heaped tsp cumin
1 heaped tsp turmeric
1 heaped tsp ground coriander
1 cup rolled oats, blitzed into flour (or plain flour)
1 cup grated cheese
2 eggs
To finish:
Sesame seeds
Olive oil
Method
Prepare the vegetables
Grate the sweet potato, carrot and courgette. Using your hands or a clean tea towel, squeeze out as much liquid as possible. This helps the fritters become crisp when baked.
Mix the fritter mixture
Place the squeezed vegetables into a large bowl. Add the diced onion, garlic, ginger, coriander, spices, oats (or flour), grated cheese, eggs, salt and pepper.
Combine well
Mix thoroughly with your hands until everything is evenly combined.
Shape the fritters
Line a baking tray with parchment paper and sprinkle some sesame seeds onto the tray.
Form the fritters
Grab handfuls of the mixture and firmly compact between the palms of your hands to form patties. Place onto the tray. This recipe makes around 10 fritters.
Top and drizzle
Sprinkle additional sesame seeds over the top and lightly drizzle with olive oil.
Bake
Bake in a preheated oven at 200°C (400°F) for around 30 minutes, or until golden, crisp and cooked through.
